Gluten Free and Gluten
Glutens are proteins found in wheat, rye, and barley. It is the stuff that holds flour together so that yeast will cause bread to rise rather than just sit and bubble. Gluten wrecks havoc on people with celiac disease, triggering a response to the autoimmune system that damages the small intestine. About 1% of people suffer from celiac disease. Most beer contains grains that include glutens. Brewers are now making beers without glutens by using other grains or making beers that use an enzyme to reduce the levels of glutens in beer. For something a litle diferent, try Saké, cider of mead. All Saké is made with rice and is gluten free. Cider is made with apples and is gluten free. I know of one cidermaker that uses grains that contain gluten and that gluten is enzymatically removed. Mead is made with honey, which is gluten free. Many meads have fermented fruits and spices which are gluten free. Braggot is a variety of mead made with malted barley (mead and beer) and does contain gluten.
